Vegetable Soup

  • any and all vegetables, lots of them, chopped
  • water or bone broth
  • bay leaf, spices etc.

Beginning with a hot pan and starting with the hardest vegetables first lightly sauté or steam fry them adding softer vegetables part way through. Season as you'd like and cover with water. Bring to a boil then reduce heat and simmer for about an hour. Simple.

Also good with cooked grains or beans like rice, lentils, quinoa, or even oats added after cooking. Stores well in the freezer.
