Super Simple Supper
This is my go-to favorite, especially when a one pot meal is necessary!
- sweet potato
- spices (my favorites are turmeric, cumin and garlic)
- red lentils
- shredded coconut
I like to start with the carrots, onions and celery and cook them until they are slightly soft. I then add some spices as well as some red lentils (or any other split bean or pea) before adding any liquid. I like to blend some shredded coconut and bone broth in a blender and pour that over the vegetables as well as any remaining softer produce (like cauliflower, peas etc.) and bring the whole thing to a boil. Reduce to a simmer until everything is mushy, or to your liking. Fabulous served with some chopped avocado.
