Sweet Morning Greens

I made a promise to myself that I would try to start eating greens at every meal. The thing that I notice most is how much energy I have throughout the afternoon eating this way...No need for caffeine! Because batch cooking is the key to eating well for us, this time of year I generallly have some apples baked off for applesauce. Recently I had some that never made it into the blender over the weekend so I decided to chop them up to add them to my morning greens. I started the greens off in a little coconut oil and added the chopped baked apples and a little water as the greens started to wilt. Once cooked to my liking I turned the heat off and added dried (apple juice sweetened) cranberries, shredded unsweetened coconut, and some chopped walnuts. Magnificent!
